Made in Casa hosts another successful Polselli Flour Demonstration

Polselli Flour Demonstration 

On 7th September, we were thrilled to attend yet another Polselli Flour demonstration, which was this time hosted at Made in Casa, Valerio Violetti's restaurant located in Malvern. The restaurant was packed with customers, industry partners, and 5Ways staff who were in for a delicious treat featuring freshly made pizzas and fascinating descriptions about the different types of Polselli flours and their effect on the pizzas.


Andrea Cozzolino kicked off the morning with a presentation about the varieties of Polselli products that were going to be used on the day, and discussed with customers the types of flour that he would recommend for their pizzas that would best work for the style of pizza they make. He also talked about the importance of using quality ingredients on pizzas, and presented a number of brands that offer this quality, such as Robo and, in particular, the Mediterranei San Marzano DOP Tomato Sauce, an ideal sauce base for any pizza.

Next, Valerio and Giovanni gave us a live demonstration of how to make pizza flour with a 75% hydration, discussing the fine balance between flour, water, and salt to give the perfect dough. Valerio invited everyone to feel the texture of the dough, so everyone could have a hands-on experience of how pizza dough should really feel.

Andrea and Giovanni impressed everyone in attendance with their skilled pizza making, which everyone was lucky enough to taste. They made a number of fresh pizzas in a variety of styles and using different Polselli flours to showcase the range of the products and let customers taste the difference. We were lucky enough to be treated to a Made in Casa special as well - a pizza with a purple sweet potato puree, n'duja, smoked scamorza, and pork sausage topped with cripy leeks, a truly unique flavour combination that had a delicious balance of salty and sweet, soft and crunchy.
